Super Food Scones

When speaking with my patients I find one of the hardest things to get across is how important breakfast is. And even if they agree with me, finding something that is fast and nutritious is the next hurdle they need to get over. "Breakfast" is just that, you are breaking the fast of the night. Your body needs good food to energize it so you are ready to take on a new day. Eating breakfast helps speed up your metabolism, regulate digestion, and enhance mental functions. But what can you grab on the go that has enough nutrition to make all of this happen? The answer is right here, with Super Food Scones.

These scones are double good. First, they are delicious, natural sugars and hearty grains give them a sweet earthy taste. And second, they are super good for you. Each scone has over 10 grams of protein and is filled with fiber to help boost energy and aid in digestion. If that wasn't enough, after cooking they are topped with bee pollen which is known to reduce inflammation and boost the immune system. Good taste with even better nutrition, what more could you really want? Make them on Sunday night and store in an airtight container to keep fresh throughout the week. When you have more time or are in the mood for a more decadent breakfast, accompany your scone with two eggs for a brunch-like feel in your own home. 

Ingredients

  • 1 1/2 cup flour (whole wheat or your favorite gluten-free baking flour)
  • 1/4 cup protein powder
  • 1/2 cup rolled oats
  • 1/4 cup ground flax seed
  • 1 Tbsp baking powder
  • 2 tsp cinnamon
  • pinch of salt
  • 1/3 cup coconut oil, in solid form
  • 3 ripe bananas, mashed 
  • 1 tsp vanilla extract
  • 2 Tbsp honey (optional)
  • 1/4 cup milk (dairy or non-dairy)
  • 1 1/2 Tbsp whole flax seed
  • 1 Tbsp bee pollen

  • Pre-heat oven to 425F and line a baking sheet with parchment paper
  • In a large bowl mix together all of the dry ingredients
  • Add coconut oil to dry ingredients and use a fork cut into the mixture until you have little pebble sized pieces of coconut oil mixed throughout
  • Add all other ingredients to the flour mixture and mix until well combined. You may need to use your hands to knead the dough together
  • Place dough on parchment lined baking sheet and form into a round shape about 1 inch thick
  • Sprinkle whole flax seed onto the dough and place in oven for 20 minutes or until the edges start to turn golden brown
  • Remove from oven and sprinkle bee pollen over on top of the scones
  • Cut scones into 8 triangular pieces let cool and enjoy!
